Honestly, I love pizza. Always have, always will. But sometimes, I just want to indulge in it without feeling the guilt and making these Zucchini Pizza boats were literally the perfect solution! I also love ground turkey so this delicious take on a “meat lovers” pizza topped off this cheesy saucy perfection if I do say so myself! Not only can this recipe replace Friday Pizza Nights, but it also it SO simple and easy to make. Andddd you can play around it with by adding different veggies or meat.
“Meat Lovers” Zucchini Pizza Boat:
-1 large zucchini cut in half horizontally
-Fat Free Cottage Cheese (approx 1/4 cup per half)
-Organic Tomato Paste (about 2 tablespoons)
-Ground Turkey (94% lean, about 1 lb — nature’s promise is what i used!)
-1 minced Garlic clove
-1/4 cup diced Yellow Onion
-Taco Seasoning (found a little packet of this in Whole Foods)
-Extra Virgin Olive Oil (1 tbsp)
Set the oven to 365 degrees. Slice the Zucchini in half, scoop out just enough down the middle to create a “boat” (this allows you fill it with the toppings). Place the halves in the oven to begin softening them.
Meanwhile, in a sauté pan, add the olive oil, garlic, onion on med/high heat. Then add the ground turkey into the pan. Keep an eye on this and continue flipping it around with a fork as this will cook very fast. Once all the meat has pretty much turned brown, add about 1 tablespoon (or more if preferred) of the taco seasoning and then take off of the heat.
In a separate sauté pan, add olive oil and then whatever veggies you want to add to your pizza. I used the scooped out zucchini (didn’t want to let any of this go to waste!), tomatoes, kale, and spinach. While this is cooking for a few minutes, take your zucchini boats out of the oven once you feel they’re soft enough. Layer them with the tomato paste, then the cottage cheese, then layer with the meat (you may have to try and push this all down with a spoon so that it doesn’t completely overflow). Finally, top this all off with the veggies. THrow this in the oven to bake for a few more minutes, then switch the oven to broil and let it cook for a few more minutes. Once it’s just golden and crisp, take this out and enjoy!! Top it off with some fresh basil as well 🙂
